Texas cottage food law — does freeze-dried candy qualify?

Working through this myself for the Texas side of things, and it comes up constantly, so starting the thread here rather than everyone re-researching it separately. Texas's cottage food law does cover freeze-dried candy and similar shelf-stable freeze-dried products, but the labeling requirements are specific (ingredient list, allergen disclosure, a required statement that it's made in a home kitchen not inspected by the state, your name/address). Worth actually reading the current statute yourself rather than going off secondhand summaries — rules get updated. If you're selling across state lines or planning wholesale/retail placement rather than direct-to-consumer, cottage food exemptions usually stop applying and you're into different licensing territory. Anyone here already selling under a Texas cottage food permit? Curious what your actual experience with labeling/inspection has been.
